Tomato Pie Made with Glorious Summertime Tomatoes


Nothing tastes better than the taste of a juicy ripe slice of tomato between 2 pieces of white bread, slathered in mayonnaise, topped with salt and pepper. If you want to try something a little more substantial than a sandwich, you will want to try my daughter's recipe for Tomato Pie. It's the best!


Ingredients:


For the crust:

1 cup plus 2 tablespoons all purpose flour

¼ teaspoon salt

¼ teaspoon pepper

¼ teaspoon baking powder

¼ cup olive oil

3 tablespoons of ice water

Cooking spray




Method:


Whisk together dry ingredients. Add olive oil and whisk. Add ice water and whisk. Mixture should be crumbly. Spray a 9 inch pie plate with cooking spray. Dump the crust mixture into the pie plate and press along the bottom and up the sides to form a crust. Bake for 10-12 minutes until it browns. **You can also use a premade crust, baked according to package instructions before filling.


Ingredients:


For the balsamic onions and tomatoes:

1 large sweet onion

8 roma tomatoes (or tomatoes of choice, enough to make 2 layers in your pie)

2 tablespoons olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste


Method:


Line a cookie sheet with parchment paper. Peel and very thinly slice the onion. Lay the slices out on the lined cookie sheet.

Slice the tomatoes and roast in the same pan with the onions. This will prevent the pie from being too moist.

Drizzle with the olive oil and balsamic vinegar and sprinkle on some salt and pepper.

Bake at 425 degrees for 10-15 minutes until they start to char.


For the pie filling:



Ingredients:


¼ cup grated fresh parmesan cheese.

¼ cup fresh basil, cut into strips (chiffonade)

Balsamic onions and tomatoes


Method:

After the pie crust, tomatoes and onions have baked, lower the oven temp to 350 degrees.

Sprinkle half of the parmesan cheese over the crust.

Layer in half of the onions followed by half of the tomatoes.

Sprinkle with half of the basil and remainder of the parmesan.

Add another layer of onions, tomatoes, and basil.


For the topping:



Ingredients:


1 cup mayonnaise

2 cups shredded cheddar cheese

Method:


Mix the ingredients for the topping together and spread evenly over the top of the pie.

Bake for 30-35 minutes at 350.
